A food and wine match made in heaven 

It is the meeting of the minds for two connoisseurs of Prestige Gastronomy - Head Sommelier Mike Germon and Chef Younesse Bouakkaoui that has ignited the vision to elevate the restaurant La Table de Montaigne to great culinary heights.

The Chef at the restaurant La Table de Montaigne draws on the immense wealth of French cuisine for inspiration without altering its very essence. The creations of Chef Younesse Bouakkaoui are the result of inspiration on a daily basis.
His creativity is based primarily on respect for his ingredients and traditional culinary heritage, resulting in a very personal approach to cooking which gives diners the opportunity to experience the subtlety of the flavours and colours that characterise each of the four seasons.

The Chef joined the La Table de Montaigne kitchen in 2018 to take up an extraordinary challenge: to create a team that shares his approach to cooking in order to offer both hotel guests and non-residents exceptional cuisine.
Younesse Bouakkaoui loves to share his skill and passion with his teams, and to communicate his creativity and philosophy for life through his dishes.

The Chef will demonstrate just how much he loves to showcase seasonal products using all of the subtlety, discretion and elegance that characterise his approach to cooking.

The story of Chef Younesse Bouakkaoui

Younesse Bouakkaoui is from Médoc wine region of France and after several varied experiences, he decided to integrate in 2005 a large Médoc house: Cordeillan Bages.

He worked alongside Thierry Marx and Jean-Luc Rocha. He stays in this Girondine institution for 7 years.
These two great names in gastronomy will enrich his skills and he will keep beautiful memories. Thierry Marx will be for him "his most beautiful human experience".

In 2012, the talent and ambition of the Chef do not go unnoticed in the eyes of the owner of Château Raba in Talence, Christophe San José, who then runs the premises. The Chef proposes a creative and inventive cuisine that soon aroused the interest of gourmets and professionals of the specialised press.

With many years at the Domaine de Raba, Younesse Bouakkaoui is happy to meet Christophe San José to unveil all his know-how and to make the restaurant La Table de Montaigne a reference in the gastronomic tables of Bordeaux.
